How to store Amlou? Tips and shelf life

Proper storage helps preserve the texture, taste, and aromas of Amlou after the jar has been opened. This Moroccan spread is primarily made of dried fruits and oil, so its texture can naturally change depending on temperature and resting time.

For Amlou Amlou & Joy, the instructions are simple: the jar should be stored at room temperature, in a dry place, away from heat and light. The expected shelf life is 12 months after manufacturing and 6 months after opening, without exceeding the date indicated on the jar.

Where should an Amlou jar be stored?

The best place is a clean, dry, and temperate cupboard. Avoid placing the jar near an oven, hob, radiator, or on a shelf directly exposed to sunlight. Repeated temperature variations can make the texture more uneven and accelerate the alteration of aromas.

After each use, carefully close the lid before returning the jar to its storage location. A tightly sealed container limits contact with air, moisture, and odors present in the kitchen.

Should Amlou be stored in the refrigerator?

Amlou Amlou & Joy is designed to be stored at room temperature, so there's no need to put it in the refrigerator. Cold temperatures can thicken the oil and make the paste firmer, thus less easy to mix and spread.

If a jar has nevertheless been placed in the refrigerator, let it gradually return to room temperature before mixing. Do not use a direct heat source and do not heat the jar to speed up the process.

How long can Amlou be stored?

An unopened jar can be stored for 12 months from its manufacturing date, respecting the date printed on its label. Once opened, it is recommended to consume it within 6 months.

These two indications should be read together. After opening, use the earlier of the two dates: the six-month period or the date already on the jar. To easily keep track, you can discreetly write the opening date on the lid.

Why does the oil rise to the surface?

A layer of oil may appear on the surface of natural Amlou when it remains still. This is a normal physical separation between ingredients, and not necessarily a sign of spoilage.

Before serving, gently stir the contents with a clean, dry spoon, reaching to the bottom of the jar. The preparation will gradually regain a more homogeneous consistency. Avoid removing the oil: it is part of the recipe and contributes to the texture of Amlou.

Why use a clean and dry spoon?

Moisture and food residues can contaminate the contents of the jar. Therefore, always use a clean and perfectly dry utensil. In particular, avoid re-dipping a spoon that has touched bread, fruit, yogurt, or another preparation.

Do not pour water into the jar to thin the Amlou. If the paste seems firmer, simply leave the jar at room temperature and then mix it gently. It is preferable to serve the desired amount in a small container rather than leaving the jar open for a long time on the table.

Can the texture of Amlou change?

Yes. At cooler temperatures, Amlou can become denser. When it's warmer, it may appear more fluid and the oil can separate faster. These variations are normal for a natural spread.

The color may also show slight differences from one batch to another due to the ingredients used and their roasting. A moderate variation in texture or oil rising to the surface does not, by itself, mean that the product is no longer consumable.

How to recognize abnormal spoilage?

Before consuming a product that has been open for a long time, observe its appearance and smell. If there is mold, a distinctly unusual or rancid odor, an abnormally bulging lid, or any other obvious alteration, do not taste or consume the product.
